How To Make Hard Ice-Cream 






I would like to explain in a short way how to make natural hard ice cream.

Ingredients 

milk........................................10      kgs (Pasteurized or fresh goat milk is better for hardness.)
white sugar...............................2,5   kgs
dry orchid onion powder............0.10 kgs (or Carob bean powder)




egg yellow..............................15      pc
fruit..........................................2,5   kgs
butter non-salty.......................0,20   kgs

Preparation of Mixing :

Step One   : Leave 2 kg milk and 5 kg white sugar

Step Two   :Mix  5 kgs white sugar and 0,10 kgs dry orchid onion powder. Than pour into milk. Mix gently till sugar melt. This will be main mix.

Step Three : Put 15 pc egg yellow to balance 2 kgs milk and 5 kgs white sugar and gently mix . This is second mixer.

Step Four  : Slowly pour second mix to main mix.  Put 0,200 kgs non-salty butter to mix. Boil 60 minutes and mix regularly within 5 minutes.

Step Five : Use cotton filter and pour the main ice-cream mix to another cup. Wait till get room temperature.




Step Six  :  Squeeze the fruits and pour into mix when it become room temperature.

Step Seven:  Put the main mix to ice-cream mixer (hard ice-cream machine) .

A) Mechanic Machine:  This machine is so simple. Outside is oak , there is a steel cup inside.  There is 10 cm empty area between outside oak frame and inside steel cup.  Make full the empty area with salt and ice. Put the main ice-cream mix to the steel cup of ice-cream machine. Mix  till become freeze and hard. It takes some hours and you need to add salt and ice to ice-cream machine and take out water.
B) Automatic Ice Cream Machine:
Pour the main ice-cream mix into  Automatic ice-cream machine. It will work automatically.






Step Eight:  After freezing , take it to deepfreeze in -24°  via 24 hours.
